Elote tastes like a perfect harmony of sweet, smoky, creamy, salty, and tangy flavors. The natural sweetness of the grilled, charred corn combines with rich mayonnaise and crumbly, salty cheese, while a splash of lime juice and a dusting of chili powder provide a sharp, zesty kick.
What are the different regional variations of elote?
Regional variations of elote (Mexican street corn) across Mexico and Central America differ mainly in toppings and, in some cases, the use of butter or cream, featuring regional favorites like chili-lime powder in central Mexico, cheese/crema in southern regions, and shrimp powder on coasts. Common types include elote preparado (classic), elote loco (Central America), and esquites (corn in a cup).

Ingredients:
1 hot dog (we prefer the Kirkland monsters from Costco)
2 slices thick cut bacon
1/4 cup frozen corn, cooked per bag instructions
cojita cheese
dash of chili powder (we used chipotle for an extra kick)
diced cilantro
wedge of lime for serving
lime mayo (recipe below)
hot dog bun (check video for type)
1. Spread out the cooked corn on the griddle over medium heat and cook long enough to get a char on the corn. Remove the corn from the griddle and sent aside.
2. Place the bacon wrapped hot dogs on the griddle over medium heat and cook until the bacon gets good and crispy. Remove the dogs from the griddle and set aside.
3. Coat the buns with mayo, then toast on the griddle over medium low heat until they are good and toasty.
4. Construct your Elote Dog as follows: place a layer of the lime mayo on the bun. Top that with the bacon wrapped hot dog. Top that with a 1/4 cup of the cooked, charred corn. Add a layer of cojita cheese, then top with the crunchy bacon bits and jalapeños, then cilantro.
5. Serve with a slice of lime. ENJOY!
Lime Mayo
1 cup of mayonnaise
2 T of fresh lime juice
1 t of lime zest
1 t of minced garlic (or garlic powder).
1. Whisk together ingredients.
2. Enhance it with cilantro or spices for a brighter, spicier flavor if you wish!
