Mexican meets Italian in a Glorious Fusion!
The traditional Discada we made before was a huge hit. It got me to thinking…what is Discada was Italian vice Mexican?
Things to know:
Where did the discada come from?
Discada’s origin is in Northern Mexico, evolving from ranch life where farmers and cowboys repurposed large, concave plow discs (discos) from tractors as cooking pans over campfires to feed large groups. This technique, blending various meats, vegetables, and spices, became a communal meal, celebrating cultural fusion and resourceful cooking, popular across northern states like Sonora and Sinaloa.
What kind of meat is in traditional discada?
Discada meat is a hearty, mixed-meat dish from Northern Mexico, cooked in a large, concave “disco” (plow disc), combining various meats like bacon, chorizo, beef, and pork with vegetables (onions, peppers, tomatoes) for a flavorful, one-pot meal perfect for feeding crowds, served in warm tortillas as tacos. It’s a versatile, protein-packed “cowboy wok” meal, rich in texture and flavor from the different meats rendered together.
What kind of meat is in Italian discada?
Italian sausage, pepperoni, pancetta, prosciutto, and salami.
What is pancetta?
Pancetta is an Italian salt-cured and air-dried pork belly. Pancetta tastes rich, salty, and savory, with a deep pork flavor and warm spice notes, similar to bacon but without any smokiness.
What is the closest substitute to pancetta?
The closest and most practical substitute for pancetta is unsmoked regular bacon (or regular American bacon if you blanch it first), because both come from the pork belly and share a very similar fat and salt content
What is prosciutto?
Prosciutto is an Italian dry-cured ham made from the hind leg of a pig and typically served in thin, delicate slices.
Are you supposed to heat up prosciutto?
You do not need to heat up prosciutto because it is dry-cured and ready to eat cold, but you can cook it to make it crispy.
