If you grill the fish for too long, it will become dry and lose flavour. It is important not tot urn the fish too early too early, otherwise it may fall apart. Wait until a crust has crust has formed on the underside of the fish before you turn it. Another common mistake is constantly moving the fish on the grill.

Popular seasonings for grilled fish include staples like lemon pepper, Old Bay, garlic powder, and smoked paprika, often combined with olive oil to keep it moist. Mediterranean herbs (dill, parsley, thyme), Creole/Cajun blends, and soy-ginger glazes are also popular, while firmer fish can handle bold jerk or chili rubs.

10 rockfish fillets

1. Set your grill up for direct cooking and warm your grill to 400F.  If using a Kamado Joe like me, install the Stainless Steel Cooking Grate.

2. Apply olive oil to both sides of the fillets, then season with the rub, then salt and pepper.

3. If you are using a searing grate as I am in the video, as you lay each fillet on the grate, drape them onto the oiled grate on the first side, then flip and do the same to the other before laying them flat.

4. The fish should take about 10 minutes.  You are looking for an internal temperature of 145F.

5. Remove your fillets from the grill, add your favorite sauce if you wish, or eat them as is.  ENJOY!
