Things to know:

Is a bone-in ribeye roast the same as a prime rib roast?

Yes.  Typically when referring to a ribeye roast, it is simply a prime rib with the bones removed.  Bone-in beef cuts tend to be more intense, and there is a lot of flavor and moisture that comes from fat as well. Prime rib typically contains more beef and fat, though bone-in ribeyes are hardly lacking. Bone-in versions of both cuts enhance the taste of the meat closest to the rib bone.  Prime rib does come from the same area of the animal that the ribeye roast does, the primal rib section.

How long does a prime rib/bone-in ribeye roast take to cook on a rotisserie?

Roast on the rotisserie for 90–105 minutes, cooking to your doneness target. For medium-rare slices, plan to pull the roast around 125–130°F in the center, then let carryover heat finish the job while it rests. Remember: the end pieces will always be more done than the center.

What is Arby’s Horsey Sauce?

It is basically deli horseradish sauce which is prepared horseradish combined with sour cream, mayonnaise, or heavy cream, and can include other ingredients like dijon mustard (or spicy brown mustard), apple cider vinegar (or lemon juice) and black pepper to add complexity and depth.

What is special about a kamado grill?

Thanks to the unique design of a kamado with its airtight seal and high mass, it’s not only accurately adjustable but also consumes very little charcoal. When you finish cooking you close the air flow and the charcoal extinguishes. Next time you will continue using it so nothing is lost.

What is the history of Kamado Joe?

Founded in Atlanta in 2009 by Bobby Brennan and Kerry Coker, Kamado Joe modernized ancient Japanese-style ceramic cooking by creating high-quality, innovative charcoal grills. Known for “smarter” features like the Air Lift Hinge and Divide & Conquer system, they aimed to make versatile kamado cooking easier.

Ingredients:

 

1 3 bone bone-in ribeye roast

coarse sea salt  

Arby’s Horsey sauce  

Mayo 

Spiceology – SPG

 

1. The night before the cook, place the roast on a wire rack and generously apply coarse sea salt to the roast.  Chuck the roast into the fridge overnight.

2. The day of the cook, set your grill up.  You want to bank your charcoal towards the back of your grill so you do not have active fire directly below your roast.  Burying a couple of chunks of wood (we prefer Texas Post Oak when cooking beef) will give your roast more flavor.  Place your spit on the grill prior to lighting the charcoal so you can set on of the forks to ensure your roast will be sitting in the center of your grill.  Fully open your bottom vent and light your charcoal, leaving the lid open for 15 minutes or so.

3. Once the fire is looking healthy, shut the lid and adjust your top and bottom vents as necessary to achieve 300-350F in your grill.

4. Prep your roast by adding a binder.  We used a mixture of mayo and Arby’s Horsey sauce.  Then apply your rub.  It is up to you if you want to do these steps first, them place the roast on the spit, or to harpoon the beef first.  My thought is harpooning the roast first makes it easier to handle the roast.

5. Place the roast in the grill, turn on your rotisserie motor and cook until you reach an internal temperature of 125F ish (for medium rare).  For our 8 lb roast, this took about 90-95 minutes.

6. Remove the roast from the grill and loosely tent with foil for at least 15 minutes.  If dinner time is further away, no worries!  Place a beach towel in a cooler, place the tented roast on a baking sheet in the cooler, top with another beach towel and shut the lid.  The roast can sit like this for several hours and will still be hot when you remove it for carving.

7. Carve up your roast, serve and ENJOY!
