Truffle Parm Twice Baked Taters

As a side for our incredible Grilled Fyr Blk Skirt Steak, we cook up some Truffle Parmesan Twice Baked Potatoes, utilizing Spiceology’s new spice blend.

Things to know:

What is a truffle?

This can be a little confusing.  A truffle can be an edible fungus that grows underground near the roots of trees -or- it can be a chocolate confectionery.

Are truffles a form of a mushroom?

The simple answer is yes.

Why are truffles so expensive?

Because of the combination of: their short shelf life, their rarity, their specific growing conditions, their high demand and that they grow underground and are often found by trained dogs or pigs to find them.

 

Ingredients:

 

5 russet potatoes

olive oil  

1 stick of butter

1/2 – 1 cup of sour cream

3 T Spiceology’s Truffle Parmesan Salt & Seasoning 

1 cup of your favorite shredded cheese

1-2 healthy pinches of salt and pepper  

 

1. Coat the potato skins with olive oil, then season with salt and pepper.

2. Bake your taters.  We used our Ninja XL Grill to do this at 400F for 50 minutes.

3. Shortly after baking, before they cool down too much to melt the butter, slice the potatoes in half lengthwise, carefully scoop out the innards, being careful to not puncture the skins.  Add the innards to a bowl.

4. To the bowl of tater guts, add the butter, cheese, seasoning, sour cream, salt and pepper.  Stir to mix.

5. Spoon the mixture back into the potato skins.  If you wish, add a handful of shredded cheese to the top of the twice baked potatoes.

6. Return the taters to the oven at 400F for 10-15 minutes to melt the cheese topping.

7. Serve and ENJOY!
