Pizza Soup is a tomato-based soup packed with flavors like Italian sausage, bacon, red bell peppers, mushrooms and onion, and infused with cheese! Perfect for a quick and easy weeknight dinner.

What traditionally comes on a supreme pizza?

The name “supreme pizza” is a less-than-descriptive term. One could argue that supreme pizza has made enough of a name for itself that it doesn’t need to be informative – everyone knows that it’s got mushrooms, peppers, sausage, onions, pepperoni, cheese and tomato sauce.

What does pizza soup taste like?

Well, it tastes just like pizza. Which isn’t surprising, considering it’s essentially diluted pizza sauce in a bowl. Serve it alongside a toasted baguette and some fresh mozzarella, and you’ve got yourself a meal!

What kind of tomatoes are best for pizza soup?

The best tomatoes for pizza sauce are ones below Mt. Vesuvius’ soil outside Naples in San Marzano, Italy. But, since everyone doesn’t live around Vesuvius, canned San Marzano tomatoes are available in the supermarket.  If you for some silly reason cannot find them, plum tomatoes will do.

Ingredients:

 

1 pound Italian Sausage
1 pound of ground beef
8 ounces chopped mushrooms
1/4 cup garlic
1 cup chopped zucchini
3 cups spinach

1/4 cup sliced black olives 

1/4 cup diced fresh basil
1/2 cup red bell pepper chopped
1 T Italian seasoning  

2 T Urban Slicer White Pizza Mojo seasoning  
1 (28 oz) can crushed San Marzano tomatoes  
1 (6 oz) can tomato paste  
3 cup beef broth  

1 cup roasted garlic broth  
4 ounces softened cream cheese room temp

1/2 cup heavy cream

1/4 cup parmesan + more for serving

6 strips cooked crispy bacon, crumbled

 

1. Turn the Instant Pot on sauté mode, spray the bottom of the pan and cook the meat and drain off any grease.
2. Turn the Instant Pot off and add the mushrooms, garlic, black olives, zucchini, spinach, bell pepper, spices, basil, tomatoes, tomato paste and beef broth (and garlic broth if using).
3. Stir and cook for 1 minute on the residual heat.
4. Put the lid on, turn the valve to sealing, and select Manual or Pressure Cook for 15 minutes. It will take about 15 minutes to come to pressure and begin counting down.
5. Once the cook time is over, let the pressure manually release for 5-10 minutes, then manually release the remaining pressure.
6. Stir in cream cheese, parmesan, bacon and heavy cream.
7. Serve with additional parmesan and ENJOY!
