Done much like a calzone, this stuffed pizza is a must tool in your arsenal of pies. A hearty crust filled with a rich red sauce and your favorite toppings makes this a family favorite any night of the wee

Ingredients: 

 

3 ½ cups AP Flour  

1 cup warm water (85-115°F) 

2 T yeast (not quick rising)  

2 T Honey  

¼ cup olive oil  

½ t salt  

 

1. Pour warm water into mixing bowl. 

2. Add honey and salt. Mix on low with dough hook until well blended. 

3. Add the yeast and mix on low, scaping sides to ensure all the yeast is mixed in. Allow this to sit for 5 minutes. Yeast mixture should look frothy after sitting. 

4. Add 1 cup of flour and start blending on low. Drizzle in the olive oil. Slowly add the remaining flour (1/2 to 3/4 cups at a time). If the mixture looks dry, add additional water 1T at a time. If it’s looking wet, add additional flour at same rate. 

5. Once the dough is balled up, continue “kneading” for 2-3 minutes. Remove from bowl and knead for another minute or 2 to build up gluten which will help the dough rise. 

6. Place the dough in a lightly oiled bowl and cover. Allow dough to rise for 45 minutes or until dough doubles in size. 

7. Once doubled, punch down the dough to deflate and put it back in the bowl for an additional hour to hour and a half. The dough is now ready to use. 

8. Separate the dough in half. Stretch the first half to 2-3 inches larger than your pizza pan. Place the dough in the pan and lay the excess over the edges (you’ll need this to “tuck” the top in). 

9. Add the sauce, cheese and toppings and top with the remaining half of the dough. Roll the edges to make a good seal. Brush a light coating of olive oil on the top and add a little parmesan cheese. 

10. Bake at 425°F for 10-15 minutes. Serve and ENJOY!
