Here is how we take our Chicken Ramen to the next level: adding smoked chicken!
Ingredients
1 T oil
1 medium onion finely diced
6 garlic cloves finely diced
1 T fresh ginger diced
6 cups chicken broth or stock
1/4 cup soy sauce
1-2 cups Bok Choy Asian Cabbage, finely chopped
6 chicken thighs
Your favorite Asian chicken rub (We used Weber’s Garlic Sriracha)
1 15-16-ounce pkg. Ramen or Udon Noodles, cooked according to pkg. instructions
Optional:
Green Onions garnish
Sliced Mushrooms add last minute of cooking
Sriracha
Cilantro garnish
Boiled Egg
Instructions
1. Preheat your smoker to 225F using your favorite wood.
2. Season the chicken thighs with your favorite Asian Themed rub.
3. Place the chicken thighs on the top shelf and cook until they reach an internal temp of about 165F (took us about 70 minutes).
4. Heat a heavy-bottomed stockpot over medium-high heat. Add oil and onions and let cook for 5-6 minutes, or until onions begin to soften. Stir in garlic and ginger. Cook for only 1 minute longer.
5. Add chicken broth. Stir in chili garlic sauce and soy sauce.
6. Let simmer for at least 20 minutes on medium-low heat.
7. While simmering, prepare noodles according to package instructions.
8. Stir in bok choy. Season to taste.
9. Dice up your smoked chicken.
10. To serve, place cooked noodles on the bottom of the bowl. Ladle in the broth over noodles, then add the chicken. Garnish with green onions, cilantro, and any other favorite toppings. ENJOY!
