What is Salmuera?

Salmuera is the Spanish word for brine, a concentrated solution of salt and water used in cooking and food preservation. In South American culinary traditions—especially in Argentina and Uruguay—it is a classic basting liquid splashed or brushed onto meats during a barbecue (asado) to add flavor and maintain juiciness.

How do you make salmuera?

To make traditional South American salmuera (an asado grilling brine), dissolve coarse salt in warm water at a ratio of about 1 tablespoon of salt per half cup of water, then mix in crushed garlic, fresh herbs like rosemary and oregano, and optional splashes of vinegar or red wine.

When do you apply the Salmuera?

You apply salmuera (the traditional Argentine basting brine) repeatedly during the cooking process—typically every 15 to 20 minutes for large cuts, or every 3 to 5 minutes when flipping smaller cuts like steaks—until the meat is fully cooked

How does brine work?

When you submerge meat in a wet brine, the ingredients interact with the muscle tissue on a chemical level to transform its texture and taste.

Diffusion of Ions: Salt (sodium chloride) dissolves into separate sodium and chloride ions. These ions slowly move and distribute themselves into the meat’s muscle tissue.

Protein Unwinding: The negatively charged chloride ions bind to the meat’s muscle proteins, causing the protein filaments to repel each other. This unravelling creates microscopic gaps within the muscle fibers.

Moisture Trapping: Water from the brine flows in and fills those expanded gaps. The altered proteins lock onto this liquid, preventing the muscle fibers from squeezing out moisture when exposed to high heat during cooking.

Seasoning & Flavor: The sodium ions provide basic internal seasoning, while extra ingredients like sugar, herbs, or aromatics add exterior caramelization and secondary flavor profiles.

Ingredients:

 

For the Salmuera

30 minced cloves of garlic

1 T chopped fresh oregano

1 T chopped fresh thyme

1/4 cup Spanish paprika 

1 1/4 cups white vinegar 

1 cup canola oil 

 

Mix contents.  It will keep in the refrigerator indefinitely.

 

Tomahawk Steaks

 

3 tomahawk ribeyes

1 T olive oil 

2 T Spiceology Gaucho Steakhouse seasoning

Spritz King Culinary Basting Spray (we used both Original and Chipotle)

 

1. Preheat your grill for indirect cooking.  For our Argentine Brasero grill, that means setting the grill height to where you can keep your hand over the surface to about 10-12 seconds.

2. Brush the steak with olive oil and season liberally with the Guacho Steakhouse seasoning mix. Let the steak rest at room temperature for at least 30 minutes before grilling.

3. Grill the steak with indirect heat until the internal temp is about 115F, basting every 10 minutes with either the Spritz King, salmuera or both like we did.

4.  Sear the steak on high heat for 1 1/2 to 2 minutes per side.  Remove the steaks from the grill and let it rest for 10 minutes.

5. Slice the steak against the grain into thin strips. Spread the Cajun butter bourbon sauce over the steak strips and serve immediately.  ENJOY!
