Paprikaschnitzel (Zigeunerschnitzel): An unbreaded or lightly breaded cutlet topped with a vibrant, slightly spicy sauce made of bell peppers, onions, and tomatoes.

Ingredients:
For the Schnitzel:
4 boneless pork chops (about ½ inch thick)
1 cup all-purpose flour
2 large eggs
1 ½ cups breadcrumbs
1 t smoked paprika
4 T vegetable oil or butter (for frying)
For the Jäger Sauce (Creamy Mushroom Gravy):
2 T bacon grease
1 T olive oil
1 medium onion, finely chopped
16 oz mushrooms, sliced
2 cloves garlic, minced
1 T ground dried porcini mushrooms
1/4 cup dry red wine
1 cup beef or chicken broth
1 cup heavy cream
1 t Dijon mustard
1 t fresh thyme, minced
Fresh parsley, chopped (for garnish)
1.Place the pork chops between two sheets of plastic wrap or in a gallon sized ziplock bag and pound them thin (about ¼ inch thick) using a meat mallet.
2. Season both sides with salt, pepper, and paprika.
3. Set up a dredging station: one plate with flour, one bowl with beaten eggs, and one plate with breadcrumbs.
4. Dredge each pork chop first in flour, then dip into the egg, and finally coat in breadcrumbs.
5. Heat vegetable oil in a large skillet over medium heat. 6. Fry schnitzels for 3–4 minutes per side until golden brown and crispy. Remove and keep warm.
7. In the same skillet, melt bacon grease with olive oil. Add onions and sauté for 3–4 minutes until soft. Add mushrooms and cook until browned, about 5–7 minutes. Add the tomato paste and stir to mix.
8. Stir in minced garlic and cook for 30 seconds.
9. Sprinkle flour over the mixture and stir for 1 minute. Gradually pour in broth while stirring continuously to avoid lumps. Add red wine.
10. Add heavy cream, Dijon mustard, thyme and Worcestershire sauce. Simmer for 5–7 minutes until thickened. Season with salt and pepper.
11. Pour the creamy mushroom sauce over the schnitzels and garnish with chopped parsley before serving.
12. Serve and ENJOY!
