Grilled Ribeye and Gorgonzola Pizza
Delicious grilled ribeye, sautéed onions and mushrooms all on a delicious white sauce. This pizza is amazing!

What is the history of pizza?
Pizza evolved from ancient flatbreads in the Mediterranean into a global culinary icon. It was born in 18th-century Naples as a cheap, portable street food for the working class. It exploded in popularity globally after Italian immigrants brought it to the United States in the late 19th century.

Gorgonzola is originally from Northern Italy, specifically tracing its roots to the regions of Lombardy and Piedmont. It is named after the town of Gorgonzola, located just outside of Milan, where the cheese was reportedly first created in the 9th century.
Today, Gorgonzola holds Protected Designation of Origin (PDO) status. This means that authentic Gorgonzola can only be legally produced and aged within specific designated provinces in these two Italian regions, using strictly regulated local cow’s milk.

Gorgonzola is one of the world’s oldest blue cheeses. It is said that for centuries the cheese was produced in Gorgonzola, near Milan, dating back to 879AD. Others say that it was first produced in Pasturo Nella Valsassina which was a famous area for making cheese in their excellent natural caves
Which is healthier, blue cheese or Gorgonzola?
Gorgonzola is a specific type of blue cheese. Nutritionally, they are virtually identical, but Gorgonzola generally has a slight edge for health-conscious eaters because it tends to be lower in sodium and saturated fat compared to many other standard blue cheese varieties.
Ingredients:
For the Steak:
1 10-ounce ribeye steak
Cattleman’s Grill Steakhouse Rub
1 t salt
1 T olive oil
For the Sauce:
1/4 cup butter
1/4 cup all-purpose flour
1 cup heavy cream
1/2 cup beef broth
1 t Dijon mustard (we used Zatarain’s Creole Mustard)
1/4 t salt
1/8 t black pepper
For the pizza:
1 prepared pizza dough ball (we have fallen in love with Poco Bello)
White sauce
sautéed onions and mushrooms
gorgonzola cheese
whole milk low moisture shredded mozzarella
1. Season the steak on both sides.
2. Preheat your grill for indirect and direct cooking. (Very easy to do with a Kamado Joe).
3. Place the steak on the grill on the indirect side. Cook until the internal temperature hits 100F.
4. Move the steak to the direct side and grill for 2-3 minutes per side until you form a good crust. The steak may still be a bit on the rare side, but it will cook more on the pizza.
5. While the steak is cooking, make the sauce: melt butter in a skillet over medium heat.
6. Whisk in flour and cook for 1 minute.
7. Gradually whisk in heavy cream and beef broth until smooth.
Bring to a simmer and cook until thickened, stirring occasionally.
8. Stir in Dijon mustard, salt, and pepper. (For a spicier sauce, add more black peppercorns or a pinch of red pepper flakes.)
9. Remove the steak from the grill and let it rest for 10 minutes.
10. Slice the steak against the grain into thin strips, then set aside.
11. Set your grill up for pizza cookin’.
12. Roll out your dough, then place it on your launching pizza peel on top of a decent layer or cornmeal. Give the peel a good shake several times throughout the construction process to ensure it will launch onto the grill.
13. Add a layer of the white sauce to the pizza, then a layer of gorgonzola cheese, then steak, onions and mushrooms. Top with the mozzarella and chuck that thing onto your grill.
14. Cook until the dough is done and the cheese is melted (about 5ish minutes with a Kamado Joe DōJoe).
15. Slice into pieces, serve and ENJOY!
