What does bang bang chicken have in it?
Bang Bang Chicken can refer to two completely different dishes: traditional Chinese street food or the popular, Americanized crispy fried version.
1. The Americanized Version (Crispy & Creamy)
This is the most common version found in modern Western restaurants. It typically features crispy, bite-sized fried chicken coated in a sweet, spicy, and tangy sauce.
2. The Traditional Sichuan Version (Cold & Nutty)
Authentic Chinese Bang Bang Ji is a cold starter that has absolutely no mayonnaise. The name comes from the traditional method of pounding the cooked chicken with a wooden stick to tenderize it and shred the meat.

What is the sauce in bang bang chicken?
The sauce in modern “Bang Bang Chicken” (crispy fried chicken) is a creamy, sweet, savory, and mildly spicy pink sauce. It is primarily made by mixing mayonnaise with sweet Thai chili sauce and Sriracha, often with a touch of honey or rice vinegar to balance the flavors.
Ingredients:
1 family pack of chicken wings, wing tips removed, flats and dummies separated
3 T Spiceology’s SPG
1 T smoked paprika
½ cup mayonnaise
¼ cup Thai sweet chili sauce
3 T minced garlic
juice of half a lemon
1 T honey
½ t Sriracha
1. Mix together the SPG and paprika and season your wings with the mixture, then set aside as you prepare the grill.
2. Bust out your Weber kettle and light 3/4 of a chimney of charcoal briquettes.
3. When the coals are to your liking (about 10-15 minutes) place them in a “vortex” accessory in the middle of the grill.
4. Allow your grill to preheat with the grill grates in place, the lid on and the top and bottom vents full open for at least 10 minutes.
5. Spray the grill grates with cooking spray, then place your wings on the grates, put the lid on and cook for 35 minutes. (For more smoke flavor, a a chunk of cherry. peach or apple wood to the coals AFTER you put the wings on.)
6. As you wait, in a small bowl, combine the remaining ingredients. Mix well.
7. After the 35 minutes, spray the wings with the duck fat, replace the lids, then after 5 minutes, flip the wings and apply the duck fat to the other side. Replace the lid and cook for 5 more minutes.
8. Remove the wings from the grill, bathe them in the sauce and return them to the grill for 10 more minutes.
9. Remove the wings, garnish with diced green onion, serve and ENJOY!
