Garlic Mashed Potatoes

A perfect companion to meatloaf!

Making mashed potatoes via the sous vide method is easy, requires little clean-up and comes out perfect every time!

Garlic Mashed Potatoes

1 cup olive oil  

12 trimmed garlic cloves 

8 Yukon Gold potatoes 

1 stick of butter 

1/2 cup heavy cream 

1/4 cup sour cream 

healthy pinch of salt and pepper 

Diced green onions for garnish 

 

1. Add the olive oil and ½ cup of garlic cloves to a small pot and heat over low heat until brown and tender, about 20 minutes. Strain and keep both to the side. 

2. Cut up the potatoes into 1” cubes. 

3. Add garlic, potatoes, butter, salt and pepper to a plastic bag (ziplock or vacuum sealable). 

4. Set Sous Vide (I use a Joule) to 195F. When water is at temp, place the bag in the water bath. 

5. After 2-4 hours, remove the potato mixture to a large bowl. Mash taters and add heavy cream and sour cream. 

6. Garnish and serve. Enjoy!
