Ingredients
3 pounds trimmed pork butt or shoulder
1 large white onion, finely diced
10 cloves garlic, minced
1 cup soy sauce
1/2 cup fresh lime juice (from about 4 limes)
1/2 cup of banana ketchup (sometimes called banana sauce)
1/4 cup packed brown sugar
1 T freshly ground black pepper
2 12oz. cans of 7up of Sprite
veggie oil for basting
1. The night before you make this fine dish, cut the pork into skewer friendly strips that are about 1/4 inches thick.
2. In a large mixing bowl, whisk together the onion, garlic, soy sauce, lime juice, banana ketchup, brown sugar, black pepper and 7up in a mixing bowl.
3. Add the marinade to a large ziplock bag, then add the pork. Mix thoroughly, then place in the refrigerator overnight.
4. On Skewers Day, drain off the marinade through a strainer, discard the solids and set aside. Thread the pork onto your skewers and place in the refrigerator until ready to grill.
5. Place the reserved marinade into a large saucepan. Boil on high heat until the marinade is thick and reduced to about 3 cups. It should take about 6-10 minutes.
6. Set up your grill for direct grilling. Get those grates HOT!
7. Brush veggie oil on the grates to prevent sticking and lightly brush the skewered pork also.
8. Grill the pork until is it sizzling, browned and cooked through. That should take about 3-4 minutes per side. About 2 minutes into the cooking process, begin to baste the skewers with the marinade, getting in several basting cycled before the pork is done.
9. Use the remaining marinade for a dipping sauce and serve the pork skewers. We served ours over coconut rice. ENJOY!
