Extreme Grilled Cheese Sandwiches

Inspired by a video we watched on The Silly Kitchen with Sylvia, today we are building 2 different grilled cheese sandwiches, taking a simple classic to the next level.  We share:

Sammich #1

 

2 slices sourdough bread

butter for the bread

4-6 oz shredded full fat mozzarella cheese

4 oz thinly sliced brie cheese (If you wanna get a little crazy, smoke it for 30-60 minutes at the lowest setting your smoke will go to)

enough slices baked prosciutto to cover your sandwich

1 t of honey  

1 t of diced chipotles in adobo  

thin slices of apple

 

Sammich #2

 

2 slices sourdough bread

butter for the bread

4-6 oz shredded pepper jack cheese

4 oz thinly sliced brie cheese (see above note on brie cheese)

enough slices baked prosciutto to cover your sandwich

1 t of honey  

1 t of diced chipotles in adobo  

thin slices of jicama

1. Bake your prosciutto:  see Sylvia’s episode , or crisp it up on your griddle.  Mix together your honey and chipotles.

2.  Butter your bread and place 1 slice, butter side down into your skillet or griddle.

3.  Add your shredded cheese.

4. Add you inner layers: prosciutto, apples, jicama…whatever your heart desires…

5. Add your honey/chipotle mixture.

6. Layer on your brie cheese.

7.  Add the top layer of bread.

8.  Cook in high to medium high heat for 3-4 minutes, then flip and repeat.

9.  Remove from heat and allow a few minutes for the residual heat to continue to melt the cheese.

10. Serve and ENJOY!
