What is Baileys Salted Caramel Liqueur?
Baileys Salted Caramel Liqueur is a popular 34-proof (17% ABV) cream liqueur blending classic Irish cream with rich caramel and a hint of sea salt. Known for a smooth, sweet, and slightly savory taste, it is often used in coffee, hot chocolate, desserts, or in a Salted Caramel Martini. It is generally enjoyed on ice, but you can use it in rice krispie treats. Trust me, I am a professional.
Ingredients
5 T butter
1 (16 oz) package miniature marshmallows
1/2 cup HEATH English Toffee Baking Bits
1/4 cup Baileys Salted Caramel Liqueur
12 ounces Kellogg’s Rice Krispies
1/4 cup mini chocolate chips
8 oz. semi-sweet chocolate chips
1/4 cup HEATH English Toffee Baking Bits
1/2 cup heavy cream or heavy whipping cream
1/2 cup Baileys Salted Caramel Liqueur
1. Spray a 9×13-inch baking dish with cooking spray.
2. Place Rice Krispies and 1/2 cup HEATH English Toffee Baking Bits in a large heatproof bowl.
3. In large saucepan melt butter over low heat. Add marshmallows and 1/4 cup Bailey’s Salted Caramel Liqueur Liqueur and stir until completely melted. Remove from heat.
4. Pour marshmallow mixture over rice cereal/Heath bits and stir. Transfer half of the cereal mixture to prepared baking dish and press down with greased parchment paper.
5. Place chocolate chips in a medium heat-proof bowl. Heat the cream and Bailey’s in a small saucepan over medium heat until it begins to gently simmer. (Do not let it come to a rapid boil—that’s too hot!)
6. Pour over chocolate, then let it sit for 2–3 minutes to gently soften the chocolate. Top with 1/4 cup of Heath bits.
7. With a metal spoon or small silicone spatula, very slowly stir until completely combined and chocolate has melted. If it’s not melting, do not microwave it. (The microwave doesn’t evenly warm cream like the stove does, so I always recommend the stove. If you’re left with chocolate chunks swimming in cream, do not microwave it. Instead, place the mixture into a double boiler OR place the (heat-proof!) glass bowl over a small saucepan of simmering water. Do not let the surface of the simmering water touch the bottom of the glass bowl. Stir the ganache constantly over the indirect heat until it’s smooth.)
8. Pour the ganache over the first layer of the rice krispie treats, then top with the remaining cereal mixture.
9. Allow to cool for at least 30 minutes, then cut into squares. ENJOY!
