Drunken Cherry Chocolate Poke Cake

I am always looking for a way to incorporate booze into desserts.  This moist, flavorful boozed up cake will make your friends think you are a Cake Boss!  Though this recipe is quite easy, the results are amazing.

What is the point of a poke cake?

A poke cake creates a flavorful, moist dessert by poking holes in a baked cake and pouring a liquid, like a flavored syrup, pie filling, pudding, or Jell-O, into the holes, where it soaks in to add moisture and distinct pockets of flavor and color throughout the cake, enhancing the overall taste and visual appeal when sliced.  Truly creative and talented bakers will figure out how to incorporate booze into the mix!

Are poke cakes soggy?

It you do it wrong, yes.  To keep this from happening, ensure what you are pouring on the cake is not too thin and ensure the holes are spaced at least 1/2 to 1 inch apart.

What is liqueur vs liquor?

Liqueur is a type of liquor that has been sweetened and flavored with herbs, fruits, spices, or other ingredients, while liquor is a broad term for any distilled alcoholic beverage like vodka, whiskey, or rum, which are typically unflavored and served neat or as a base for cocktails. Liqueurs have a lower alcohol content (around 15-30% ABV) and a syrupy consistency compared to liquors, which often have 40% ABV or more. 

Are cherries better for you than blueberries?

Weird you would want to know that when we are adding liqueur to the cherries, but the answer is that neither cherries nor blueberries are definitively “better,” as both are highly nutritious fruits with unique benefits. Blueberries are richer in Vitamin K and manganese and are excellent sources of fiber, while cherries contain more Vitamin C and A and are notable for their high levels of melatonin and polyphenols.

Ingredients:

 

1 box (15.25 oz) chocolate cake mix  

Ingredients called for on cake mix box (usually eggs, oil, water)

1 can (21 oz) cherry pie filling  

1/4 cup cherry liqueur
1 cup semi-sweet chocolate chips  
1 cup heavy cream
1/4 cup powdered sugar  
1 t vanilla extract  

 

1. Preheat oven to temperature specified on cake mix box.
2. Prepare and bake cake according to box instructions in a 9×13 inch baking pan.
3. Once the cake is cool, poke holes all over the surface using a wooden spoon handle or similar tool.  The holes should be about 1 inch apart.

4. In a small bowl, mix together the cherry filling and the hooch.  Evenly pour the cherry mixture over the poked cake, allowing it to settle into the holes.

5. Sprinkle the chocolate chips evenly over the top of the cherry filling.
6. In a medium bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
7. Spread the whipped cream evenly over the chocolate chips.
8. Chuck the cake into the fridge for at least 30 minutes to allow the cake to chill and the flavors to meld.
9. Cut into squares and serve.  ENJOY!
