The secret to a perfect grilled burger lies in starting with quality 80/20 ground beef (or even better, 80/20 aged ground beef), handling it gently to form loose patties with a thumbprint center, searing on high heat, flipping only once, avoiding the press, and letting them rest before serving, ensuring juicy results and great flavor. Don’t forget to toast your buns and use fresh toppings for the complete experience.
Ingredients
1 1/2 – 2 lbs ground beef (as usual, we used our aged ground beef)
2 T Dijon mustard
1 t kosher or sea salt
3 T unsalted butter
8 slices sourdough bread
6 oz. Gruyère cheese, shredded
1/4 t ground nutmeg
8 thin slices of deli ham
1. Mix the beef, Dijon mustard and Worcestershire sauce. Form the mixture into 4 patties, keeping in mind that this burger is not served on a bun, but a slice of sourdough, so shape the patty to match the bread. Make an indentation in the centre of each patty to prevent “doming”.
2. Prepare your grill for direct cooking.
3. Prepare your griddle for toasting.
4. There is no need to prepare your blender for anything.
5. Butler both sides of the bread.
6. Mix the nutmeg and cheese.
7. Grill the patties until done (about 4-5 minutes on each side). After the flip, place 2 slices of ham on top of each patty.
8. Toast the bread on one side, flip, add the cheese to the top of the toasted side as the other side is toasting.
9. Add Dijon mustard (optional) to a cheese side up slice of bread, add the patty then the other slice of bread cheese side down. Serve and ENJOY!
