Crispy Chicken Bites

This Dish is Crispy Deliciousness! Think Executive Chicken Nuggets!

You could serve some pre-made chicken nuggets at your party…or you could make Executive Chicken Nuggets. Flavored with apple and chipotle, these Crispy Chicken Bites will prove to your guests that you care about them and will put regular chicken nuggets to shame.

Ingredients

10ish bone-in skin-on chicken thighs

2 cups of your favorite brine or marinade (We used Sweetwater Spice Company Apple-Chipotle Brine)

1 cup of flour  

1 cup of cornstarch  

a healthy pinch of salt and pepper    

2 T or so of your favorite chicken rub

vegetable oil for shallow frying  

The day before:

1. Remove the bones from the chicken thighs, being careful to keep as much of the skin intact and attached to the thighs as possible.

2. Remove any excess skin, then chop the chicken thighs into bite sized pieces.

3. Add the chicken bites into a ziplock bag, add your brine or marinade and place in the refrigerator overnight.


The day of the party:

1. Remove the brine/marinade from the chicken through a strainer.

2. Mix together the flour, cornstarch, salt and pepper and chicken rub.

3. Heat about 1” of vegetable oil in a skillet to 300F.

4. Dredge the chicken bites into the flour mixture and place on a baking sheet.

5. In as many batches as necessary, fry the chicken bites in the oil for 3-4 minutes.  Remove chicken from the oil and place on a wire rack over a baking sheet.

6. Raise the oil temperature to 375F.

7. Return the chicken to the oil in batches and fry for an additional 3-4 minutes, until golden brown.

8. Place the finished chicken on a wire rack over a baking sheet and allow to cool for 5 minutes.

9. Place on a serving dish.  Serve with dipping sauces if desired, but these do not require any extra flavor.  ENJOY!
