There are two basic types of spinach with either smooth leaves or crinkly (savoy) leaves. The smooth types are normally grown for freezing and canning because they grow faster, yield more and are easier to clean. The savoy types are preferred for the home garden and fresh market use because they look and taste better, keep longer and have less oxalic acid (which can interfere with the utilization of calcium or magnesium in the diet) than smooth leaf types.

Are artichokes a fruit or veggie?

An artichoke is botanically an unopened flower bud from a thistle plant, not a fruit or vegetable, though it’s used culinarily as a vegetable, especially in Mediterranean dishes, with its fleshy leaves and heart being the edible parts before it blooms into a purple flower.

What are the different types of artichoke?

Green Globe Artichoke (the Green Globe is the most commonly grown and widely available artichoke variety), Romanesco (Purple) Artichoke, Baby Artichokes, Violet de Provence, Jerusalem Artichoke and Big Heart Artichoke.

Ingredients:

15 ounce can artichoke hearts drained and chopped  

¾ cup grated Parmesan cheese
1 cup mayonnaise  
4 cloves minced garlic
½ cup chopped fresh spinach packed

1 T Smoked Paprika  

1 t Cavendar’s Greek Seasoning  
2 pounds boneless, skinless chicken breasts (3-4 breasts), lightly pounded to even thickness
1 cup freshly grated Mozzarella cheese

Instructions

1. Preheat oven to 375 degrees F. Grease a 9×13-inch baking dish with nonstick cooking spray and set aside.

2. In a medium mixing bowl, combine artichokes, spinach, Parmesan cheese, mayonnaise, paprika, Greek Seasoning and garlic.

3. Place the chicken side by side in the baking dish and spread the artichoke mixture on top. Sprinkle mozzarella cheese evenly over the top.

4. Cover with foil and bake for 20-30 minutes (check the temp with a thermometer until it reaches at least 155℉), then uncover and flip on the broiler and cook an additional 5-10 minutes, or until cheese is browned and chicken is cooked through. Watch closely so it doesn’t get too brown. Let sit for 5 minutes before serving. ENJOY!

*NOTE – If it is still reading below 160℉, give it a few more minutes in the oven (not under the broiler).
