Creamy Garlic Parmesan Chicken

My definition of a comfort food is a protein bathed in a cream sauce served over rice.  This recipe certainly fits that description!

Ingredients

 

6 boneless, skinless Chicken thighs

Veggie oil for frying  

 

Breading:

4 T almond flour  

2 T Parmesan cheese (we used our Magic Cheese, a mixture of parmesan, asiago, romano and mizithra)

1/2 t salt  

1/4 t black pepper  

 

Garlic Butter Parmesan Sauce:

2 T butter

3 T crushed garlic

1 1/4 cups chicken stock  

1 cup whipping cream

1/4 cup grated Mozzarella cheese

2 T Parmesan cheese

1/2 t dried cilantro , OR dried parsley  

2 t chopped fresh cilantro, OR parsley

 

1.  In small bowl, combine almond flour, Parmesan cheese, salt and black pepper.  Dredge the thighs in the breading mix.

2.  Put about a 1/2″ of veggie oil in a frying pan, heat the oil to 375F, then cook the thighs on both sides, turning frequently until golden brown and almost cooked throughout. 

Garlic Butter Parmesan Sauce: 

1. In another frying pan, in butter, and over medium low heat stir fry garlic until turning golden.  

2. Add chicken stock, whipping cream, Mozzarella cheese and Parmesan cheese along with dried cilantro, OR dried parsley.   Cook until cheeses are mixed in well and melted.  

3. Add chicken and cook in the sauce 1 to 2 minutes, until the chicken is tender and done throughout when cutting into a piece. Make sure not to overcook the chicken.  Check it! Sprinkle with chopped fresh cilantro, OR parsley and serve.  ENJOY!
