Charcoal Grilling 101: Turkey Tenderloin
Over 550 episodes and this is only our third turkey one! What the heck was I thinking?!?
Thanks to know:
What is a turkey tenderloin?
A turkey tenderloin is a lean, boneless, and skinless cut of white meat found on the inside underneath the main turkey breast. Usually sold in packs weighing about 1 to 1.5 pounds, these tender strips cook quickly and work well for roasting, grilling, or pan-searing.
Is turkey tenderloin the same as turkey breast?
No, a turkey tenderloin is not the same as a whole turkey breast. A tenderloin is a small, boneless, and skinless strip of white meat located directly under or nestled inside the main turkey breast. We just said that in the question above. Are you even paying attention?
How long does turkey tenderloin take to smoke?
Smoking a turkey tenderloin takes about 1 to 2 hours at a smoker temperature of 225°F to 275°F. The exact time depends on your smoker temperature and the size of the meat. Always cook to a safe internal temperature of 165°F rather than going by time alone.
Why is the Weber Kettle so popular?
The Weber Kettle is popular because it combines low cost, high versatility, and extreme durability. Invented in 1952, its simple round shape allows you to high-heat sear, low-and-slow smoke, roast whole turkeys, or bake pizza, all while lasting for decades.
Are Weber Kettle grills worth it?
Weber kettle grills are widely considered worth the money. They cost between $149 and $249, provide great cooking versatility, and last for many years if properly taken care of.
What wood is best for smoking turkey?
Mild fruit woods and nut woods are best for smoking turkey because poultry absorbs smoke quickly. Apple, pecan, and cherry are top choices because they add a sweet, subtle flavor without overpowering the meat, while cherry also gives the skin a rich, dark red color.
Ingredients:
2 turkey tenderloins
John Henry’s Aloha Chicken & Fish Rub
4 strips of bacon
chunk of your wood of choice (we used apple)
1. With the bottom vents full open and the lid off, light a half chimney of charcoal and let is ash over for about 15 minutes.
2. Dump the coals either to one side of the Weber, or into a half-moon briquettes holder. Shut the bottom vent to about 1/2 open, place the grill grates on your Weber, and place the lid on the grill with the top vents about 1/2 open. Allow the grill to heat up for about 10 minutes. You are looking for a temperature of 250-275F.
3. Prepare your turkey by applying the rub, then wrapping the tenderloins in bacon.
4. Remove the lid, spray the grate with cooking oil, chuck a chunk of your wood of choice onto the briquets (we used apple), place the turkey on the grill opposite of the coals and replace the lid. Adjust the vents as necessary to maintain 250-275F.
5. When the turkey hits an internal temperature of 160F, remove from the grill and tent loosely with foil and allow to rest for at least 10 minutes. The temperature will drift up to a perfect 165F.
6. Slice, serve and ENJOY!
