Making the Best Cajun Sandwich Ever at Home! Catfish Étouffée Po Boy
Inspired by a restaurant in Pineville, LA, we bring you a delicious, easy-to-make Cajun delicacy! Behold, the Catfish Étouffée Po Boy! Find out: What goes on a catfish po boy? What is a catfish boy? What is on the fish po boy sub?
Ingredients:
1 medium onion (finely diced)
1 bunch celery hearts (finely diced)
1 red bell pepper (finely diced)
5 T butter
1 bag Étouffée Mix (We used LOUISIANA Cajun Etouffee Mix)
1 heaping spoon of garlic
1 catfish fillet per sandwich
1 french loaf roll for each sandwich
shredded lettuce
Directions:
1. Melt the butter in a skillet over medium heat
2. Cook the Holy Trinity until the onions turn translucent.
3. Add the garlic.
4. Add the Étouffée mix and stir until combined.
5. Add 2 cups of water. Bring the mix to a boil, then lower to a simmer and simmer for 20 minutes, then remove from heat.
6. Bread your catfish and fry until done.
7. Add the Mayo to your roll, top with lettuce, catfish then Étouffée.
8. Serve and ENJOY!
