Bleu Cheese Stuffed Hatch Green Chile Burgers

Faced with abundance of Hatch Green Chiles, we found a way to utilize a few with this fantastic burger!

Ingredients:

 

For the Garlic Aioli

½ cup mayonnaise  

1 T roasted garlic minced

1 T lemon juice

¼ t kosher salt 

2 t olive oil  

¼ t pepper  

 

Instructions

1. Mix all ingredients in a small bowl to combine.2. Refrigerate at least 30 minutes before serving.

 

For the Burger

Ingredients (Makes 4 burgers)

2 pounds Lean Ground Beef (We used our Aged Ground Beef )

1 cup Crumbled Bleu Cheese to taste

Salt and Freshly Ground Pepper

8 slices Cheddar Cheese

4 New Mexico Hatch Green Chiles, roasted, peeled, seeded (If it’s not currently Hatch season, feel free to use the grand-daughter of the Hatch, the Anaheim Pepper)

Garlic Aioli

 

1. In a bowl, combine the beef, bleu cheese and salt and pepper until well mixed.

2. Form the mixture into 8 4oz balls.

3. Place the meatballs on your griddle (we used our Blackstone), or in a cast iron skillet.  Season the ball with your favorite seasoning (we use a mixture of salt, pepper, garlic powder and onion powder).  Smash the meatballs into thin patties.  You can use your spatula, or a meat press like we did.

4. Place the chiles on the griddle to warm.

5. Once you begin to see the borders of the smash burger begin to crisy, flip the patty, add a pepper and then the cheese.

6. Once the cheese begins to melt, spread the aioli on the bottom of a bun, then 2 chile and cheese topped patties.

7. Place the top bun on the burger, unhinge your jaw and enjoy!
