Big Beef N Cheddar

Make Your Taste Buds Sing: Try This Delicious Big Beef N Cheddar Recipe!

The Arby’s Big Beef and Cheddar is an American Classic. We will recreate this masterpiece at home, utilizing the Smoked Roast Beef we made a few weeks ago.

For the Copycat Arby’s Sauce 

1/2 cup of ketchup (I used Red Duck Smoked Ketchup

1 T Apple cider vinegar  

6 T of Water (maybe more to achieve the desired consistency) 

1/4 t Onion Powder  

1/4 t Garlic Powder  

2 T Brown Sugar  

1/4 t salt  

 

1. Combine all the ingredients in a saucepan on medium low heat. Stir frequently for about 20 minutes. 

2. Add water as necessary to maintain that thin consistency of Arby’s sauce. 

 

For the Cheese Sauce 

2 T unsalted butter 

2 T all purpose flour  

1/4 t salt  

1 cup whole milk 

1 3/4 cups shredded sharp cheddar cheese 

 

1. Add the butter to a sauce pot on medium heat. Once the butter has melted, stir in the flour to make a roux. 

2. Turn heat to medium low and slowly stir in the milk. Once all the milk has been added and the mixture comes to a simmer, whisk in the cheese. Continue to stir until all of the cheese has melted and incorporated. 

 

Makes 4 sandwiches: 

2 lbs Roast beef 

1/2 cup beef broth  

Copycat Arby’s sauce (recipe above) 

Cheddar Cheese sauce (recipe above) 

Deli Horseradish sauce 

 

1. Toast 4 onion buns 

2. Add the roast beef to a skillet along with the beef broth. Heat on medium low heat. 

3. Place deli horseradish on the bottom bun. Top with 8 oz of roast beef. Top that with the copycat Arby’s sauce and the cheddar cheese sauce. Top with bun and ENJOY!
