Baked Chocolate Mousse

Ingredients

 

For the Mousse:

 

1 cup sugar  

2 cups (4 sticks) of butter (salted or unsalted…your choice!)

1 cup water

1 t instant coffee (we used espresso powder)   

16 oz semisweet chocolate bar(s) broke into pieces

8 eggs slightly beaten

 

For the crust:

 

2 1/4 cups of Oreo cookie crumbs (remove the cream first) 

1 stick of butter (again, salted or unsalted…your choice!)

 

1. Mix together the Oreo crumbs and butter, then press into the bottom of a greased  10″ cheesecake pan.  Fully cover the bottom and work the crust about 1/3 to halfway up the sides of the spring-form pan.

2. Pre-heat your oven to 350F.

3. In a saucepan over low heat, add the sugar, butter, water, coffee or espresso powder and chocolate and stir continuously until the mixture is melted and smooth, then remove from the heat.  Stir in the eggs slowly to prevent cooking the eggs (see the episode) then pour into the pan over the crust.

4. Bake for 80-90 minutes.  The result should be a little giggily, but fully set.

5. Allow the mousse to cool at room temperature for at least 4 hours, then cover with plastic wrap and refrigerate for at least 4 hours.  ENJOY!
