The secrets to the best grilled cheese are to use a combination of melty and flavorful cheeses, spread the outside of the bread with mayonnaise or butter, and cook it slowly over medium-low heat for even browning and perfectly melted cheese. Shredding your own cheese from a block, rather than using pre-shredded, also prevents it from clumping and results in a smoother melt.  To take it even further, think of what you could include in your sandwich.  Pickles and bacon, as with this recipe.  Raw apples give the sandwich a sweet bite with a great crunchy texture.  The list is endless!

The best cheese for grilled cheese uses a blend for ultimate gooeyness and flavor, with reliable melters like American, Monterey Jack, Gruyère, Fontina, or Mozzarella for stretch, paired with flavorful options like Cheddar (mild/medium), Gouda, or Colby for taste, ensuring you shred fresh cheese for best results.  We have been known to add smoked cream cheese and the results were AMAZING!

What heat is best for grilled cheese?

Cook grilled cheese on medium-low heat (around 275-300°F) to ensure the bread gets golden brown and crispy without burning before the cheese melts perfectly, typically taking 3-5 minutes per side, often with the pan covered to trap steam and melt the cheese faster.

Which bread is best for grilled cheese?

The best bread for grilled cheese depends on preference, but popular choices include sourdough for its tangy flavor and sturdy crust, Texas toast for its thick slices and buttery flavor, and brioche for a rich, sweet, and soft sandwich. Other great options are rye bread for its complementary flavor with sharp cheeses, or specialty breads like jalapeño-cheddar or cranberry walnut for a more complex taste.  Of those, our favorite is sourdough.

Ingredients:

 

1 lb of Bacon, cooked lightly crispy

Dill pickle spear slices  

1 loaf sliced sourdough bread

Butter, softened to room temperature

Medium cheddar cheese slices

American cheese slices

 

1. Heat a skillet or frying pan over medium high heat.

2. Butter the outside of 2 slices of sourdough.

3. Prep the sandwich for frying so that it looks like this:

Buttered bread

American Cheese

Bacon

Pickle

Cheddar Cheese

Buttered bread

4. Grill the sandwich for 1-2 minutes per side, until the bread is lightly browned and the cheese is just starting to melt. Remove from the skillet/frying pan and allow to cool for 1 minute.

5. Slice and ENJOY!
