Ingredients:
2 lb ground chicken
2 T olive oil
1 small onion, finely dice
1 small red bell pepper, finely dice
2 celery stalks, finely diced
4 garlic cloves, minced
2 T Cajun seasoning
1 t smoked paprika
1 t garlic powder (we used Spiceology & Hell’s Kitchen – Vampire Killer – Garlic Parmesan Spice Blend)
1/4 cup ketchup
1/4 cup mayo (we love the Kewpie)
4 T tomato paste
2/3 cup chicken broth
1/2 cup heavy cream
8 slices pepper jack cheese
8 brioche buns, lightly toasted
Optional: Diced green onions for garnish
1. Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned, breaking it up with a wooden spoon (about 5–7 minutes). Remove from the skillet and set aside.
2. In the same skillet, sauté diced onion, bell pepper and celery until softened, about 4 minutes. Stir in minced garlic, Cajun seasoning, and smoked paprika. Cook for another 1 minute until fragrant.
3. Add ketchup, tomato paste, chicken broth, mayo, and Worcestershire sauce. Stir to combine and simmer for 3–4 minutes. Return the chicken to the skillet and mix thoroughly.
4. Lower the heat and stir in heavy cream. Let the mixture simmer gently until thickened, about 3–5 minutes.
5. Place a slice of pepper jack cheese on the bottom of each toasted brioche bun. Spoon the Cajun chicken mixture over the cheese and top with the other half of the bun. Garnish with parsley if desired. ENJOY!
