What kind of mushrooms are best for stuffing?
Cremini mushrooms (baby bellas) are widely considered the best choice for stuffed mushrooms due to their firm, meaty texture and deep flavor, which holds up well to baking without becoming soggy. For larger appetizers, baby portabellas or full-sized portobellos are excellent, while white button mushrooms are a suitable, mild alternative.
Ingredients
16 large Cremini mushrooms (baby bellas), stems removed and cleaned
1/2 pound ground beef
1/2 T dried minced onion
1/2 T of your favorite burger seasoning (we use equal parts salt, pepper, garlic powder and onion powder that we keep on hand)
4 slices of white American cheese
6 slices bacon, cooked and crumbled
1/4 cup diced onion
1/4 cup diced tomatoes
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
1 t garlic powder (We used Spiceology’s Vampire Killer)
2 T each of mustard, mayo, ketchup and dill pickle relish
Salt and pepper, to taste
Chopped fresh parsley, for garnish
1. Set your grill up for indirect cooking. You should be able to keep your hand over the grilling surface for 6-8 seconds.
2. In a skillet over medium heat, cook the ground beef, burger seasoning and minced onions until browned and cooked through. Drain any excess fat.
3. In a large mixing bowl, combine the cooked ground beef, crumbled bacon, diced onion, diced tomatoes, shredded cheddar cheese, shredded mozzarella cheese, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined.
4. Stuff each mushroom cap with the beef mixture, pressing down gently to fill completely.
5. Mix together the mustard, mayo, ketchup and relish. Place a dab of this mixture on the top of each stuffed mushroom.
6. Cut each slice of American cheese into quarters (or large enough pieces to cover the mushroom) and place the cut slice on top of the mushroom
7. Place the stuffed mushrooms on the grill and cook for 15-20 minutes, or until the mushrooms are tender and the filling is heated through and the cheese is melted.
8. Remove from the grill and garnish with chopped fresh parsley before serving. ENJOY!
