Smoked Chipotle Strawberry Wings. What else really needs to be said?
Things to know:
How long do you smoke smoked chicken wings?
Smoke chicken wings for 1.5 to 2 hours at 225°F–250°F, aiming for an internal temperature of at least 165°F–175°F. For crispier skin, many users suggest a “low and slow” smoke for 1 hour, followed by cranking the smoker to 350°F–425°F for 15–30 minutes. We have had great success with smoking our wings at 425F for 45 minutes, saucing them, then returning them to the smoker for another 10 minutes.
How to get crispy skin on smoked chicken wings?
Our AI overlords say to get crispy skin on smoked chicken wings, dry them thoroughly with paper towels and toss with baking powder (1 tbsp per lb) to raise the pH and draw out moisture. Smoke at higher temperatures (300°F–400°F) to render fat, or sear them at 400°F+ at the end of the cook. We simply chuck them into a 425F smoker for 45 minutes, then sauce them and return them for another 10 minutes, but what do we know?
Do you flip wings when smoking them?
Our AI overlords say: Yes, you should flip chicken wings halfway through smoking (typically around the 30–60 minute mark) to ensure even cooking, color, and texture on both sides. While some indirect methods don’t require it, flipping helps prevent hot spots and ensures the skin crisps uniformly. We typically do NOT flip ours and they have came out great every time!
Can I smoke a chicken without brining?
If you are smoking whole chickens and want even seasoning from edge to center, brining can also improve the final result. That said, if you already manage your smoker temperature well and consistently cook chicken to the proper internal temperature, you may find that brining is helpful but not absolutely necessary.
Ingredients
2–3 lbs chicken wings
1/2 cup onions (finely chopped)
2 T chipotle peppers in adobo sauce
1/2 t chipotle powder
3/4 cup strawberries (hulled)

2 1/2 T butter
1. Prep your smoker for indirect cooking at 425F.
2. Season chicken wings with salt, pepper, and chipotle powder.
3. Melt 1 1/2 T of butter in frying pan over medium-high heat.
4. Chuck your wings into the smoker for 45 minutes.
5. Meanwhile: in a frying pan over medium heat, sauté onions in 1 T butter. Remove from heat when soft and put in blender.
6. Add chipotle peppers and adobo sauce, strawberries, pomegranate molasses, and lime juice, and blend together until smooth.
7. After removing chicken from the smoker, move wings to a mixing bowl and toss with strawberry mixture. Coat thoroughly using tongs.
