Ingredients

1 pkg Jus Rol Puff Pastry

1 pound Andouille sausage

15 – 17 shrimp (peeled, deveined and tail removed)
1 chicken breast (sliced into small pieces)
1 yellow, red or orange bell pepper, diced
1 white onion, diced
1 – 2 jalapeno peppers (sliced)
2 T Cajun seasoning  
2 garlic pods (crushed)
1 cup marinara sauce  
Olive oil  
Freshly chopped parsley (garnish)
Shredded mozzarella cheese

 

1. Slice the andouille sausage and season it along with the chicken & shrimp, in Cajun seasoning (1 ½ T).

Preheat your oven to 400F.

2. Remove the puff pastry roll from the package and unroll.

3. Cut a 1/4 in strip from each side of the pastry.  Place the remaining sheet on a baking sheet, then place the strip onto the remaining sheet to form “curbs”.  Trim as necessary to make your flatbread “purdy purdy.”

4. Perforate the entire center of the pastry with a fork to prevent excessive “puffing”.

5. Chuck the baking sheet into the oven for 10 minutes to par-bake the pastry.  Remove the baking sheet from the oven and set aside.

6. Heat olive oil in a pan, add the seasoned meats, and sauté. Cook for 2 minutes on each side till browned. Remove the meats from the pan and set aside.
7. Into the same pan, add crushed garlic and sauté for a few seconds. Add sliced bell peppers and onions, ½ T Cajun seasoning, sauté and cook until softened. Add olive oil if necessary. Remove the veggies from the pan and set aside.
Add marinara sauce into the same pan, cook on medium heat until it is slightly thick.
8. Spread the marinara sauce evenly on top of the flatbread as the base. Top with some mozzarella cheese.
9. Spread the cooked chicken, shrimp, sausage and vegetables evenly on top of the flatbread, and finally top with jalapeños and some more mozzarella cheese.

10. Return the baking sheet to the oven for at least 10 minutes or until the cheese is melted and the crust is done.

11. Remove the flatbread from the oven, garnish with freshly chopped parsley.  Cut, serve and ENJOY!
