This recipe is a variation on the classic NYC chopped cheese sandwich. A classic NYC chopped cheese features seasoned ground beef cooked with diced onions, melted American cheese, and served on a toasted hero or hoagie roll, typically topped with shredded lettuce, sliced tomatoes, mayonnaise, and sometimes ketchup. Key ingredients are ground beef, yellow onion, American cheese, hoagie/hero rolls, and fresh toppings like lettuce and tomato, with seasonings like garlic powder, salt, and pepper.

Common mistakes when making a chopped cheese include using the wrong seasoning (missing Adobo/Sazón), not draining excess fat from the beef, using crusty bread instead of a soft hero roll, forgetting to butter and toast the bun, adding too much or too thin cheese, and skipping the crucial final step of wrapping it in foil to steam and meld the flavors.
What kind of bread is used for chopped cheese?
In a chopped cheese sandwich, the classic choice of bread would be to use a long roll such as a hoagie or hero roll. It’s not set in stone, though. The important thing is that it’s a soft bread rather than a crusty one. You can alternatively use a brioche bun or a potato bun.

Ingredients
2 lbs mild or sweet Italian Sausage
1/2 pound of sliced pepperoni, sliced into quarters
1 finely diced red bell pepper
1 finely diced sweet onion
1/2 lbs finely dices baby bella mushrooms
about 2 cups of Italian cheese
1/4 cup parmesan cheese
4 T minced garlic
Hoagie buns – we got ours from Noble Bread
about a cup of pizza sauce
1. Take all of your ingredients except the pizza sauce out to your griddle, preheated to medium high.
2. Place the hoagie buns on the griddle and gently place a weight on them to form a crispy crust. It took us about 3 minutes per side.
3. Send the buns into the house and have your fine woman spread pizza sauce on both sides.
4. Add the bell pepper, onions, mushrooms, garlic, Italian sausage and pepperoni (why didn’t we just say all of your remaining ingredients except the cheeses???) onto the griddle, then start to choppin’ to mix. Continue choppin’ until most of the pink is gone from the sausage.
5. Add the cheeses (both Italian and parmesan) and continue to chop until fully mixed and all of the pink from the sausage is gone.
6. Take that incredible mixture back inside, put a good heap of it on your bread, top it with some more cheese because, who really likes to poop?
7. Wrap the sammich with foil or sandwich wrapper and chuck it into the over, set to warm. Let it set for at least 15 minutes to give the extra cheese a chance to melt.
8. Serve and ENJOY!
