It’s totally fine to eat zucchini raw. There is also no need to remove the skin or seeds. In this recipe, the raw zucchini is shaved super thin and then mixed with other amazing ingredients.

Bad zucchini will feel rubbery or slimy to the touch. It may also have an off-putting smell and dark or fuzzy moldy spots. The interior of bad zucchini may be off-white to brownish with stringy, mushy flesh and large, hard seeds.

Ingredients

 

1 1/2 pounds zucchini

1/2 t grated lime zest plus 1 tbsp juice

1 garlic clove, minced

3/4 t salt  

1/4 t pepper  

2 T EVOO  

1/2 c chopped fresh cilantro

2 ozs queso fresco, crumbled (1/2 cup)

1/4 c pepitas, toasted

 

1. Using a vegetable peeler, slice zucchini lengthwise into very thin ribbons.

2. Whisk lime zest and juice, garlic, 3/4 tsp salt, and 1/4 tsp pepper together in a large bowl.

3. Whisking constantly, slowly drizzle in oil until incorporated.

4. Add zucchini, cilantro, and queso fresco and toss to combine.

5. Season with salt and pepper to taste. Sprinkle with pepitas and serve immediately.  ENJOY!
