The key is the contrast between the savory beef and the bright, creamy sauce, with the sour cream added at the end to prevent curdling.

What sides go with stroganoff?
Stroganoff pairs best with starches like egg noodles, mashed potatoes, or rice to soak up the sauce, plus something fresh/acidic like a simple green salad with vinaigrette, or fresh veggies such as steamed green beans or roasted broccoli/asparagus to cut the richness, and always crusty bread like garlic bread for dipping.
Ingredients:
16 oz Shiitake mushrooms thinly sliced
4 T butter
4 chicken breasts cut into bite size pieces
3 t smoked paprika
2 t Dijon mustard
2 shallots thinly sliced
8 cloves garlic thinly sliced
2 1/2 – 3 c sour cream
2 T parsley
1 t salt
1/2 t pepper
1/2 c white wine
Instructions
1. In a medium bowl combine chicken, smoked paprika, salt and pepper.
2. Melt 2 T of butter in a large skillet and over medium high heat.
3. Add mushrooms and cook stirring occasionally for 5 minutes or until slightly browned. Remove mushrooms to a plate.
4. In the same pan, melt the remaining butter and cook chicken, 3-4 minutes per side. Add shallot and continue cooking for another 3 minutes.
5. Stir in garlic, give it another 30 seconds and return mushrooms back into the pan.
6. Add sour cream along with Dijon mustard, cover with a lid and simmer on a low heat for 5 minutes.
7. Sprinkle with the parsley and serve immediately. ENJOY!
