Ingredients:
3 lbs boneless pork country style ribs or a 3 lb.boneless pork sirloin roast
20 oz. chopped green chiles
1 12 oz bottle of Mexican beer (We used Modelo)
1/4 cup recaito
1 T Better than Bouillon Smoky Chipotle
2 T taco seasoning (We used Cattleman’s Grill Mexicano )
1 T ground cumin
1 T Mexican Oregano
Tortillas (6 inches), warmed
Optional toppings: Shredded pepper jack cheese, minced fresh cilantro, refried beans, Shredded lettuce and sour cream
Directions
1. On the sear of sauté setting (whichever your InstantPot has) brown the pork roast on all sides. Then turn your InstantPot off.
2. Mix chiles, beer, recaito, taco seasoning, oregano and cumin, then spoon over pork. Cook, covered, on high pressure for 40 minutes with a 10 minute natural release.
3. Remove pork; cool slightly. Skim fat from cooking juices. Shred meat with 2 forks. Return to Instant Pot heat through.
4. Make tacos or burritos with the optional toppings. ENJOY!
