Air Fryer Smashed Potatoes

Things to know:
Are gold potatoes the same as Yukon Gold potatoes?
No. Though they have similar starch content and flavors, the Yukon Gold potato is a cross between a yellow and a white potato. Because of the similar characteristics, all 3 can be used interchangeably in recipes.
Which is healthier, Yukon Gold or russet potatoes?
Though Yukon Gold potatoes taste amazing, the Russet has the advantage with 50% more fiber and 25% more protein than an equivalent serving of Yukon Golds.
Do Yukon Gold potatoes need to be peeled?
Heck no! Their thin skin tastes great!
What oil is best for roasting potatoes?
Neutral oils are the way to go, especially the ones with a high smoke point such as avocado oil, canola oil, coconut oil, corn oil, peanut oil, safflower oil or vegetable oil.

Ingredients:
6 Yukon gold potatoes (or less if your air fryer will not accommodate that many)
1. Set your air fryer to bake at 350F for 45 minutes.
2. Once the preheat cycle ends, place your potatoes in the fryer.
3. Once the taters are baked, remove them from the air fryer, then while they are still hot, smash them (the bottom of a large Mason jar works well for this).
4. Place the smashed taters back into your air fryer. Spray them with avocado oil and season with salt and pepper.
5. Cook the taters on Air Crisp for 10 minutes at 390F.
6. Serve with the toppings of your choice: butter, onion, chives, bacon, sour cream. and ENJOY!
