Columbian Style Green Beans Cooked in Milk

Looking for something to go with a South American main dish?  Look no further, my friends!

Ingredients

 

3 t salt  

1 pound green beans, trimmed

4 garlic cloves

3 T extra virgin olive oil  

1 small white onion, finely chopped

2 scallions, both white and green parts, finely chopped

1/2 cup whole milk

 

1. Bring 3 quarts of water to boil in a large pot.  Add 2 t of salt and the beans, then cook for 2-3 minutes.

2. Drain the beans, then plunge the beans into a bath of ice water.  Drain the beans and set aside.

3. Crush the garlic and 1 t of salt in a mortar and pestle into a paste.

4. Heat the oil in a large skillet over medium heat.  Add the onions and scallions and sauté until soft (about 5 minutes).  Add the garlic paste and cook for an additional 2 minutes.

5. Stir in the green beans and milk and bring to a boil over high heat until the sauce thickens (about 2 minutes).  Serve immediately and ENJOY!
