Smoked Bacon Wrapped Beef Tenderloin

Want to treat your guest right? This meal will never let you down!  This is one of the easiest elegent meals you can make!

Ingredients

 

1 4 Lb Beef Tenderloin

1 Roasted garlic bulb (we used a very large one)

1 T salt  

1 T oregano  

Olive oil  

1 package thin sliced bacon

 

Instructions

 

1. Pre-heat your smoker to 275° F

2. Put the Roasted Garlic, Salt, and Oregano in a blender (or deep sided vessel if using an emersion blender).

3. Drizzle in enough olive oil to make the mixture is slightly thinner than a paste consistency creating a wet rub.

4. Coat the tenderloin with the wet rub on one side.

5. Lay out bacon slightly overlapping each slice to the length of your tender loin

6. Lay the tenderloin on the bacon rubbed side down and coat the remaining surface with the wet rub.

7. Wrap the bacon around the tenderloin and secure with trussing pins or cooking twine.

8. Place the tenderloin on the pre-heated smoker’s upper shelf or away from the fire box.

9. Smoke until an internal temperature at the thickest part of the tenderloin is 135°F.

10. Allow the tenderloin to rest for 20-30 minutes before removing the trussing and slicing.

11. Serve and ENJOY!
