Here is an amazing, easy and delicious recipe perfect for the mid-week meal!
Ingredients:
Chicken Breast
Hardcore Carnivore Texas Chili Lime Rub
Plowboys BBQ Sweet 180 BBQ Sauce
Bacon Bits
Monterey Jack Cheese
Sharp Cheddar Cheese
Green Onions – Diced
1. Set the smoker up for indirect cooking at 325°F using a mild wood (cherry or pecan would work great).
2. Generously coat the chicken breast with the rub.
3. Once up to temperature, place the breasts on the grates and cook until an internal temperature of 155°F.
4. Transfer the chicken to a cast iron griddle (or pan) that you’ve been pre-heating in the smoker w/the chicken.
5. Glaze the breasts with the Sweet 180 BBQ sauce and continue cooking until an internal temperature of 165°F.
6. Top the breasts with generous amounts of the Monterey jack and sharp cheddar cheeses and bacon bits. Allow the cheese to start melting and then remove the chicken from the smoker.
7. Top with green onions and serve immediately. ENJOY!
