Hatch Green Chile Biscuits and Gravy

Inspired by an incredible restaurant in Prescott, AZ, The Local, we bring you a fantastic breakfast item!

Ingredients:

For the biscuits

2 cups flour  

1 t baking powder  

1 t sugar  

1 t salt  

3/4 stick of butter

3/4 cup of buttermilk or whole milk

1/4 cup diced fire roasted Hatch Green Chiles  

1/4 cup cheddar cheese (we used Trader Joe’s Unexpected Cheddar)

 

1. Add the dry ingredients to a bowl and mix.

2. Place the butter in the freezer for 20-30 minutes, then grate with a box grater.

3. Add the grated butter to the bowl and gently fold in, being sure to not overwork the dough.  You should end up with a “crumby” mixture.

4. Add the remainder of the ingredients and mix again, gently, being sure to not overwork the dough.

5. Turn the dough out on a floured surface.

6. Knead by folding in half, then rotating 90 degrees and repeating for a total of 6 times.

7. Shape the dough into a rectangle about 1″ thick.

8. With a 2 1/2″ biscuit cutter, cut out your biscuits and lay them on a parchment paper covered baking sheet.  Reform the dough as necessary to get all of the biscuits you can out of the dough.

9. Cook the biscuits in a 425F oven and cook for 10-13 minutes.

 

For the gravy:

 

1/3 cup of diced fire roasted Hatch Green Chiles (puree them in a blender if you wish for a smoother gravy)  

1 lb breakfast sausage (pretty much any kind other than something sweet will work)

1 T dried minced onions  

1 to 1 1/2 t garlic powder  

1 1/2 cup + more to reach desired consistency of milk

1/4 cup + more as necessary to gain your desired consistency of  flour  

 

1. In a skillet on medium heat, cook and break up the sausage until you see no pink.  About 1/2 way through the cooking, add the Hatch Green Chiles and dried minced onion.  About 3/4 way through the cooking, add the garlic powder.

2. Add a 1/4 cup of flour to the skillet and stir to incorporate.

3. Add about 1 1/2 cup of milk and stir to mix.

4. Continue to cook until you reach your desired consistency.  Add more flour or milk as necessary to reach desired amount and consistency.

5. Serve over your biscuits and enjoy!
