Peach Jalapeño and Apple Cherry Habanero Ribs

After staring at 2 delicious sounding glazes sitting in my cabinet for months, I decided today was the day to use them.  I was not disappointed!  These ribs are amazing!

Ingredients:

 

2 racks St Louis Style Ribs

Sweetwater Spice Co. Tres Chiles Brine  

R Butts R Smokin Cherry Habanero Rub 

Kosmo Q Peach Jalapeño Rib Glaze  

Texas Pepper Jelly Apple Cherry Habanero Texas Rib Candy  

 

1. Remove the membrane from the back of the ribs.  Cut the slabs in half.

2. Marinate overnight in Sweetwater Spice Co. Tres Chiles Brine

3. The following day, remove the ribs from the brine and remove any excess brine with paper towels.

4. Liberally apply the R Butts R Smokin Cherry Habanero Rub.

5. Set your smoker to 250F.

6.  Spritz your ribs every 90 minutes with an equal amount of water and apple cider vinegar.

7. At about the 4 hour point, apply the first coating of the glaze.

8. After 15 minutes, apply the second coat, remove the ribs from the smoker , cover with foil and allow to rest for at least 15 minutes.  Cut and enjoy!
