Satisfy Your Cravings with Crispy Smoked Red Chimichurri Wings

Chimichurri is a fantastic accompaniment to any meat.  Red Chimichurri takes it to the next level.  After tasting this masterpiece, we will never make “regular” chimichurri again!  Then once you try this on chicken wings, you will have a new favorite!  We will tell you:

Ingredients

 

Recipe for the Red Chimichurri (For best results, make this the night before)

 

For the Smoked, Crispy Wings:

 

3 lbs. chicken wings, separated

2 1/2 T baking powder  

Kosher salt to taste  

Vegetable or canola oil for frying    

 

1. Preheat your smoker to 250 degrees F using your favorite wood.

2. Dry your chicken wings thoroughly on all sides with a paper towel. Place them in a ziplock bag.

3. Add the baking powder and salt to the wings, close the bag, and toss to coat evenly.

4. Place the wings directly on the grill grates, close the lid, and smoke for 30 minutes.
5. Use a deep fat fryer, or heat a large pot filled only halfway with oil over medium heat.

6. Combine the flour and a few tablespoons of your favorite dry rub seasoning in a large bowl.

7. Coat the wings in the flour, shaking off the excess and place them on a board until the oil is ready.

8. Once the oil temperature reaches 350º, fry the wings for 2-3 minutes until the coating is light brown in color and crispy.

9. Toss the wings in the red chimichurri and serve immediately.  ENJOY!
