Cincinnati Style Pizza Exists and You Can Make It!

This entry into our pizza series focuses on Cincinnati’s LaRosa Pizza. A thin crust, a thick sweet sauce and loads of provolone cheese makes this a pizza you need to add to your menu! Ingredients:

 

For the dough:

 

1 t active dry yeast 

1 t sugar 

¼ cup warm water

2 cups warm water

1 T sugar 

1 T salt 

¼ cup olive oil 

5 cups bread flour, plus more as needed 

 

1. Bloom the yeast in a stand mixer bowl with the teaspoon of sugar and ¼ cup water.

2. When it’s frothy, add the rest of the ingredients and mix with the dough hook until a smooth ball comes together. It should be only slightly sticky; if it’s very sticky, add additional flour.

3. Divide dough into four equal parts, roll each into a smooth ball and place in its own, well-oiled bowl.

4. Age in the refrigerator for at least 24 hours or up to a week.

 

For the sauce:

 

2 T olive oil 

1 (28oz) can tomato puree 

1 t dried minced onion

1/2 t dried basil 

1/2 t dried oregano 

1/2 t dried thyme 

1/4 t dried parsley 

1/4 t salt 

3 cloves minced garlic

1/2 T minced carrot

1 1/2 T honey 

2 T brown sugar 

fresh ground pepper to taste 

 

1. In a large pot, heat oil over medium heat.

2. Add the Tomato Puree; watch out for splatterage!

3. Add everything else and simmer uncovered on low, stirring frequently, for 30-60 minutes, until desired consistency.

 

Tips:

– Freeze leftover sauce until ready to use; When using on pizza dough, thaw to room temperature; Thaws nicely in the microwave.

– Don’t use too much pepper.

– You can mince a baby carrot in the garlic press after microwaving it for 5-10 seconds- just cut it in half before putting it through the press- and that equals about 1/2 Tablespoon.

– Either Light or Dark Brown Sugar is fine, but the dark brown sugar makes the sauce DEEP red- almost maroon.

– If you want the sauce even sweeter, just add more Honey next time.

 

Toppings:

Family Recipe Pizza Sauce and provolone, topped with lots of pepperoni, sausage, ground beef, capocolla ham and bacon. Cut into squares and ENJOY!
