Cheesy Delicious Perfection! | Ultimate Grilled Cheese Sandwich and Creamy Tomato Basil Soup
This is not the afterschool snack your mom made you after a bad day in elementary school. This is THE Ultimate Grilled Cheese Sandwich. Thick cut smoked bacon, smoked cream cheese, parmesan and white cheddar make this an adult indulgence fit for any occasion. Serve with this amazing Tomato Basil Soup!
Ingredients
12 slices thick-cut bacon
1 cup good mayonnaise
1/4 cup Dijon mustard
1/4 cup freshly grated Parmesan cheese
1 1/2 t kosher salt
1/2 t freshly ground black pepper
1/2 t white pepper
1 loaf of sourdough bread, sliced 1/2 inch thick (12 slices)
6 tablespoons salted butter
6 oz. Cream Cheese, softened
6 slices White Cheddar
1. Pre-heat smoker to 250 degrees.
2. Place the bacon on a grate covered sheet pan and place on the upper rack.
3. After 20 minutes turn the bacon and place the cream cheese on a plate at the far side of the smoker.
4. After 10 minutes remove the cream cheese and continue smoking the bacon until just crisp.
5. In a mixing bowl, mix the mayonnaise, mustard, parmesan cheese, salt, peppers, and cream cheese.
6. We did this in our Ninja Foodi XL Grill and Griddle but if you’re using a pan:
Heat a frying pan or sauté pan over medium heat. Coat one side of each slice of the sourdough. Place two slices of sourdough into the pan, buttered side down. Spread 1 1/2 tablespoons of mayonnaise spread on one slice and a slice of white cheddar on the other.
7. Lightly brown each side and then combine. Finish browning each side. Slice and ENJOY!
Creamy Tomato Basil Soup
Ingredients
1 chopped onion
6 oz. Tomato paste
4 cloves chopped garlic
1 oz fresh basil
4 T Butter
1 t dried parsley
1/4 cup flour
1 t dried basil leaf
2 T Chicken Better than Bouillon
2 t Salt
1/8 t crushed red pepper flakes
2 t Black pepper
(More if you like spicy heat)
3 T Lemon juice
1/2 t smoked paprika
1 cup heavy cream
2- 28 oz cans of San Marzano Plum Tomatoes
32 oz. Chicken stock
1. In a dutch oven or heavy pot melt butter over medium heat
2. Add the flavorful onions and garlic
3. Sauté until translucent and smelling wonderful
4. Add salt, pepper, paprika, and crushed red peppers
5. Cook until onions are soft
6. Add flour
7. Mix and cook while stirring continuously until things turn slightly brown
8. Add Chicken Better than Bouillon and cook for a couple more minutes
9. Add the Chicken stock, canned tomatoes, tomato paste, basil, parsley, and lemon juice
10. Bring to a boil and reduce heat to a simmer.
11. Cook for another 20 minutes
12. Carefully use an immersion blender, food processor, or blender and puree (turn it to mush)
13. Return to the heat and add the heavy cream.
14. Bring back to a simmer
15. Dish into a bread bowl, sprinkle with cheese, and ENJOY!
