Our Take on the King of Salads! | Caesar Salad
Created by an Italian in Mexico in 1924, this creation has become the King of Salads!
Ingredients:
Croutons
3 cups of hard bread (I used home made ciabatta) cut into bite sized chunks
2 T of Olive Oil
1/8 t of kosher or sea salt
1/8 t of freshly ground pepper
1 t of Garlic Garlic Seasoning (or seasoning of your choice)
Mix the bread cubes and oil in a bowl until evenly coated. Add seasonings and mix again. Place the bread cubes on a baking sheet and bake for 15 minutes at 350F.
Dressing:
1/2 cup mayo
1/4 cup grated parmesan
2 T Lemon juice
1 T white wine vinegar
1 T Dijon mustard
3 rinsed anchovy fillets
3 garlic cloves
1/2 t kosher or sea salt
1/2 t freshly ground pepper
1/4 cup extra virgin olive oil
Add all ingredients except for the olive oil to a blender. Once fully mixed, slowly add the oil until fully emulsified.
