You Won't Believe this Blueberry Chipotle Grilled Chicken Recipe!

Our Smoked Chipotle Strawberry Wings were such a hit…and blueberries are my favorite berry…how could this possibly go wrong?!?

Ingredients:

 

2–3 lbs bone-in skin on chicken thighs

1/2 cup onions (finely chopped)

2 T chipotle peppers in adobo sauce  

1/2 t chipotle powder  

3/4 cup blueberry preserves

1 t pomegranate molasses 

1 T lime juice

2 1/2 T butter

salt & pepper to taste   

 

1. Set up your grill for 2 zone cooking.

2. Season chicken with salt, pepper, and chipotle powder.

3. Melt 1 1/2 T of butter in frying pan over medium-high heat.

4. Chuck your chicken onto the grill on the side opposite the fire.  Maintain a 300F temp and let cook for 30-45 minutes.

5. Meanwhile: in a frying pan over medium heat, sauté onions in 1 T butter. Remove from heat when soft and put in blender.

6. Add chipotle peppers and adobo sauce, blueberry preserves, pomegranate molasses, and lime juice, and blend together until smooth.

7. Move the chicken thighs, skin side down to the direct cooking side and baste the opposite side with the sauce.

8. After 5-10 minutes, when the skin begins to crisp, flip the thighs and baste the skin side.  Continue to cook until the thighs reach 180F internal.  Reserve the remaining sauce for dipping.

9. Remove from the grill and allow to rest for 10 minutes, then serve and ENJOY!
