Is flatbread healthier for you than regular bread?

Compared to thicker breads like sandwich loaf or brioche, flatbread often has fewer calories per slice. What is the history of Kalamata olives?

Kalamata olives, originating from the Messenia region near Kalamata in Greece’s Peloponnese peninsula, have been cultivated for centuries. Renowned for their deep purple hue, almond shape, and rich flavor, they are hand-picked to avoid bruising and are traditionally cured in brine or vinegar. These olives are a cornerstone of Mediterranean culture, with cultivation dating back thousands of years.

What is feta cheese?

Feta is a brined, white cheese from Greece, traditionally made from sheep’s milk or a mix with goat’s milk, known for its salty, tangy flavor and crumbly texture. It’s aged in brine, which keeps it moist and flavorful, and is a versatile ingredient used in salads, pastries, and roasted dishes, adding a creamy, acidic, and salty element. While nutritious, it’s high in sodium, so moderation is key, and it’s best purchased in blocks in brine for authentic flavor and texture.

Ingredients:

 

4 pieces of flatbread

garlic spread

2 T olive oil 

1 lb ground lamb

1 T Spiceology – Greek Freak Mediterranean Spice Blend (Salt-Free)

 

Toppings: add what your heart desires.  We added the following…

Smoked Kalamata Olives 

Artichoke hearts 

Diced red onion

Feta cheese

 

Toppings we did not add but recommend:

Shredded provolone cheese – this will act as the “glue” for your toppings.  Ours was delicious, but a bit messy…

Diced sun dried tomatoes 

Diced fire roasted red bell peppers 

Thinly sliced strips of fresh basil

 

1. Heat the olive oil in a skillet on medium high heat.  Add the lamb and Greek Freak seasoning and cook until all of the pink is gone.

2. Pre-heat your oven to 375F

3. Spread the garlic spread on each piece of the flatbread.  Top with the lamb and your favorite toppings.

4. Chuck your flatbread into the oven and cook until the flatbread begins to brown and the provolone (if you used it) to melt.  Should take 10ish minutes.

5. Remove from oven, allow to cool for a few minutes, slice into pieces and serve.  ENJOY!
